(Arguably) The Best Potato Salad
In my extremely unbiased opinion *wink wink*, I make the best potato salad around. Team mustard, no mayo, the way it was intended. Try it out and go ahead and try to prove me wrong.
What ya need:
2 C potatoes, cubed and boiled until soft (I used peter wilcox potatoes)
2 tbsp red wine vinegar
1.5 tbsp quality olive oil
1 tbsp dijon mustard
1 tbsp nutritional yeast
pressed garlic cloves (I say choose your own adventure/amount when it comes to garlic. I used 3 large cloves)
1 tsp dried dill
1/4 C chopped fresh parsley or other herbs
salt + peppa to taste
Directions:
Pre-boil potatoes until soft, rough mash but leave er chunky. Let cool on counter for 10min.
Mix all dressing ingredients in a small bowl then add to potatoes. I like to refrigerate it overnight so it has time to become well acquainted with its flavors, but feel free to chow down immediately if you prefer instant gratification.
