Sweet Potato + Quinoa Salad

Cheesy roasted sweets? Yup. Garlic herb quinoa? You betcha. A salad that’s filling and delish? Hell yes it is. (Pro tip: pre-cook the sweets + quinoa for a super quick meal to throw together throughout the week)

What ya need for the sweets:

  • 2 small sweet potatoes

  • 1 tbsp nutritional yeast

  • 1/2 tsp garlic powder

  • avocado oil spray

  • salt and pepper to taste

What ya need for the quinoa:

  • 1 C uncooked quinoa

  • 2 C water

  • 3 cloves garlic, minced

  • 1 tbsp rice vinegar

  • 1/2 tbsp liquid aminos

  • 1/4 C chopped fresh parsley

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • salt and pepper to taste

What ya need for the salad:

  • cooked and cooled sweets + quinoa

  • fresh spinach, chopped

  • 1/2 an avocado

  • 1 tsp hemp hearts

  • 1/2 tbsp pepitas

  • fresh cilantro

  • vinaigrette made from equal parts lemon juice, balsamic vinegar, olive oil

  • flaky sea salt

How to:

  1. Toss all ingredients on sweets and bake at 385 degrees until crispy. about 30min, tossing half way. Allow to cool.

  2. Add all ingredients for quinoa except parsley and garlic to a sauce pan, bring to a boil, cover, and turn to a simmer allowing to cook for 10-15 or until all water is gone. Remove from heat, add garlic and parsley, mix well and recover with lid allowing to cool completely.

  3. Assemble that salad and chow down, fam
